An historic culinary tradition, curing foods preserves the valuable protein and elongates its shelf life whilst the smoking process ensures a consistently tender and succulent quality to the final product.

 

Jody Scrutton

Hailing from the dewy meadows of Great Britain, Jody Scrutton established Melbourne Cured to continue his passion for the craft of cured and smoked goods in Australia.

Passion and an unwavering commitment to quality is what motivates and inspires Jody to bring high quality smoked goods to Australians. Having owned and operated a smokery in Wales for a number of years prior to their recent relocation, Scrutton’s artisan food goods earned him prominence across the UK and continental Europe.  

As a recipient of multiple prestigious UK food awards, Scrutton’s products also achieved success when featured on renowned television programs Sunday Kitchen, The Great British Menu and Something for the Weekend.  Jody was also an official sponsor and supplier to International Culinary Teams competing at venues around the world. 

Notable stockists include Selfridges Oxford St, Partridges and Daylesford Organics in the UK with ambitions to expand this exclusive list to leading supermarkets, delis and stores across Victoria and Australia.

Process

We work with only the highest quality ingredients to craft our range of smoked food products.

Our specialty curing blend of salt and sugar is combined in either a wet-cured marinate or layered beds for dry curing before being smoked to perfection.  

Sustainably sourced from the Victorian highlands, we smoke our products over premium Yarra Oak wood chips that infuse the foods with refined smoky characteristics. Our trusted supplier, SmokeMaster, is the leading standard in wood chips and produces the finest quality materials for premium smoked foods. The smoking process not only adds to the flavour profile but also helps to extend the shelf life of the products.  

We are passionate about sourcing the highest quality produce from which to craft our product range. We partner with sustainable and ethical suppliers to ensure we work with only the best ingredients.
